Today's post is brought to you by the color purple.
Not one, but two days in a row last week, as I was preparing dinner, I was struck by the bounty of purple foods spread out before me. And there wasn't any overlap!
You may recall that in books about colors, particularly colors in nature, purple is pretty much always eggplant.
I'm here to show that purple can be so much more!
In the first photo there was eggplant, purple onions, and an apple. The second photo has purple potatoes, purple cabbage (from our own garden), purple beets, and purple kale.
Scrumptious and delicious!
Who knows, perhaps this week I'll discover we have purple peppers, purple (green) beans, and and some concord grapes.
