As many of you know, I've been experimenting with almond flour as an alternative to blood-sugar-crash-inducing grain flours and must say - I can now make a mean waffle I can eat.
This is partially inspired by an almond flour cookbook, partially by waffleizer ("30 answers to the question 'Will it waffle?'") and most importantly my love for our waffle iron. There's just nothing like bacon and waffles for dinner - especially when you still feel well an hour later. :)
